With St. Patrick’s Day right around the corner, it’s the perfect time to whip up a bright green Grasshopper Pie! Little leprechauns love to help make this dessert as much as they like to eat it.
Grasshopper Pie is a fun and easy dessert that kids love to help make – they can crush the cookies while you prepare the rest.
Grasshopper Pie
- One package of chocolate sandwich cookies (like Oreos), divided as indicated below
- 3 tablespoons melted butter
- 3 cups miniature marshmallows
- 1/2 cup 1% or 2% milk
- 1/8 teaspoon peppermint flavoring
- 4-5 drops green food coloring
- 1 cup whipped topping
- Pulse about 18 chocolate sandwich cookies in a food processor to make crumbs – or put them in a zip lock bag and roll with a rolling pin to crush them (or tiny little hands can crush them easily).
- Pile cookie crumbs into the center of a 9-inch pie plate.
- Drizzle melted butter over cookie crumbs and mix gently.
- Press the cookie crumbs into the pie plate to form a crust. Freeze for 10-15 minutes.
- While crust is freezing, put the marshmallows and milk in a saucepan and heat over low heat until the marshmallows are melted (keep heat on low so it doesn’t scorch). Remove from heat, and stir in the peppermint extract and food coloring.
- Fold in the thawed whipped topping.
- Take six (6) chocolate sandwich cookies and crush into small pieces (kids love this part too!). Stir the cookie pieces into the marshmallow mint mixture.
- Pour the grasshopper pie filling into the cookie crumb crust. Crumble more crushed chocolate sandwich cookies on top for garnish if desired.
- Freeze the pie for 30 minutes or more.
