Royal Icing
- 4 egg whites
- 4 cups confectioners’ sugar (sifted)
- 1 teaspoon lemon extract
- 1 teaspoon cream of tartar
- Beat egg whites in clean, large bowl using mixer on high speed. Beat until foamy.
- Gradually add sugar, lemon extract, and cream of tartar.
- Beat at high speed until thickened.
When dry, Royal Icing is very hard and resistant to damage so it’s the perfect icing for decorating. Cookies don’t get smeared and messed up when packing them because the icing dries hard and fast.
It can be easily colored offering lots of decorating options. You can even use it to write messages because it is thick and firm.
