Lemon Crackle Cookies

• 1 Box Lemon Cake Mix
• 1 small container of Cool Whip (thawed)
• 1 egg
• 2 tsp. lemon zest (optional)

Mix all ingredients together thoroughly to form a dough. Roll in into small balls and roll in confectioner’s sugar. Place on cookie sheet lined with parchment paper.

Bake for 10-12 minutes or until done. Allow to cool  – cookies will ‘crackle’ a little more as they cool!
