Chocolate Peanut Butter Snowflake Stacks

We can’t help but share special recipes this time of year. After all, busy moms and dads are looking for quick and easy.

If you’re looking for a creative way to create some delicious holiday snacks without filling them with sugar, you will love this recipe. Most of the refined sugar has been eliminated and the bran cereal makes them a bit healthier than normal.

The result?

Simply delicious!

Chocolate Peanut Butter Snowflake Stacks
Makes 36 stacks

1 c. semi-sweet chocolate chips (we used Sunspire Organic 42% Cacao Baking Chips)
1 c. peanut butter chips
3 c. Kellogg’s All Bran
1/2 c. unsweetened shredded coconut

leap of tasteIn a glass bowl, heat chocolate chips and peanut butter chips until melted. Make sure not to burn them – check occasionally and stir as needed. Pour All Bran in a large bowl. Once chocolate peanut butter mixture is melted, pour on top of All Bran. Mix well with a soft spatula, making sure not to break the All Bran. Spoon dollops of the mixture onto parchment paper – about the size of a rolled cookie dough ball. Sprinkle the top of each stack with coconut. Refrigerate for about 20 minutes to harden.
