Season’s Best: Quick and Easy Apple Crisp

This is a simple recipe that takes advantage of the season’s apples – kids love it! And best of all, you don’t feel guilty because it’s such a “healthy dessert” since most of the sweetness comes naturally from the apples and it includes healthy oats.

Apple Crisp with Oat Topping

Preheat oven to 325 degrees while preparing Apple Crisp.

  • 4 medium baking apples, cored and sliced very thin (do not peel)
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 2 tbsp sugar

Mix above ingredients, covering apples evenly with the mixture. Place in a 9-inch baking dish or pie plate, spreading apples evenly. You can also divide the apples and topping among smaller, individual baking cups for a fun family presentation. Kids love having their own ‘dessert dish’.

Topping:

In a small bow, mix topping ingredients until crumbly:

  • 1 cup quick oats
  • 1 tsp cinnamon
  • 1/4 cup brown sugar
  • 2 tbsp margarine (melted)
  • 1-2 tablespoons flour (start with 1 tbsp and add more if needed to make mixture crumbly)
  • Finely chopped pecans (optional)

Once all ingredients are mixed well and crumbly, sprinkle topping over apples. (Note: if topping is not crumbly enough, add a little more oats but not too much or it will be dry).

Bake at 325 degrees for 30 minutes (or until apples are soft).
